Nicoise Salad

Cost per serve  $2.70

Ingredients

175g (approx. 30) cups fresh Green Beans, trimmed & blanched
1 Iceberg Lettuce, washed & cut into quarter’s
1 punnet Cherry Tomatoes, cut into half
425g can Tuna in Spring Water, drained
½ Spanish Onion, thinly sliced
Freshly Ground Black Pepper to taste
4 Eggs, hard boiled, shelled & quartered
350g (approx. 10) baby New Potatoes, steamed
½ Spanish Onion, thinly sliced
¼ cup small Black Olives
2 tablespoons extra Virgin Olive Oil +
2 tablespoons Wine Vinegar or Lemon Juice + 1 clove Garlic + 1 teaspoon Dijon Mustard (optional) + freshly Ground Black Pepper to taste

Method

Divide remaining ingredients over each plate.

Whisk ingredients together for salad dressing. Drizzle over each salad and serve.
