Egg Sandwiches Three Ways

Ingredients

3 Eggs lightly beaten
1 tablespoon Sweet Chilli Sauce
Baby Rocket leaves, to serve
1 tablespoon chopped basil

Method

Chop 3 boiled eggs and mix with 1 tablespoon good quality mayonnaise, 1 tablespoon chopped basil and 1 tsp finely grated lemon rind. Season to taste and use a tsp to fill a baguette, along with some baby rocket leaves.

Chop 3 boiled eggs and mix with 1 tablespoon sweet chilli sauce and 1 tablespoon chopped fresh coriander. Serve on wholegrain bread spread with light cream cheese and sliced tomato.

Chop 3 boiled eggs and mix with 1 tablespoon good quality mayonnaise, 2 tablespoons chopped semi dried tomatoes and 2 tsp baby capers. Serve on wholemeal bread shredded iceberg lettuce.

Cooking Tip

Serve with Baguette or with a slice of crusty wholemeal bread.
